Café Puya

Fill the bottom of a stovetop moka pot (cafetera) with water up to the valve.

Add ground coffee to the filter basket — level it off, but don't pack it.

Assemble and place over medium heat. Listen for the gurgling sound.

Remove from heat as soon as the top chamber fills. Pour into small cups and serve black.
